Join ethnobiologist Marc Williams for a wide-sweeping overview of a range of healthy, tasty and probiotic foods. This class will be a great opportunity to holistically explore the ancient art of fermentation. We will start with a presentation on basic benefits and principles, then proceed to a more in-depth description of the processes regarding the production of foods like kombucha/jun, kraut/kimchi, kvass, dosas, Essene bread, idlis, seed cheeses and more. We'll taste samples of the products as we discuss them, and we'll also provide handouts with recipes.
